WHAT IS Kombucha?

While Kombucha may have been around for over 2,000 years it still remains new to the majority of our population.  

Kombucha the functional beverage 

Kombucha (‘Kom-Bu-Chah’) is made from fermented tea.  The colony of good bacteria reacts with the tannins in the tea and the sugar and releases healthy bacteria, growing probiotics and creating healthy acids.  

 

All of this helps to feed the microbiome in your gut, which basically means your gut works better (it needs bacteria).

 

FERMENTATION

We carefully designed our fermentation tanks to maximise the exposure and surface area of our colony of bacteria and yeast to the tea and raw organic cane sugar (all kombucha needs sugar).  This maximizes the consumption of sugar and increases the good bacteria, probiotic production.  It’s not about the size of the tanks, large or small, it’s about surface area to depth.  I love a little Math in life. 

 

We designed our tanks for kombucha production to maximize the contact with our SCOBY. Every step of our process is super important to us, it affects everything from taste to those health benefits.

We ferment for as long as possible, on average 21 days.  We want as much of those healthy ingredients being created as possible.

 

HEALTHY GUT – HEALTHY LIFE.  

Did you know your gut has more motor neurones than your brain.  It literally thinks about you more than you do.  If your gut is healthy and happy so are you.  Your gut affects your mood, your energy, being able to think clearly.  It does much more than process food.

WHAT ARE THE KOMBUCHA BENEFITS?

There is very little human trials conducted on Kombucha consumption and it’s health benefits so none can be verified.  However, that doesn’t mean there is no evidence or support for this.

 

What we can say is it helps your digestion, rids your body of toxins, and boosts your energy. It also boosts your immune system, helps you lose weight, wards off high blood pressure and heart disease. But there’s not a lot of clinical trial evidence to support these claims.  However the studies, mainly in eastern Europe are sufficient to warrant some trust in the health benefits of this elixir.

Kombucha has sugar and caffeine, as well as B vitamins. It also has probiotics -- the “good bacteria” that are considered helpful for your body.

Studies in animals show the drink lowers cholesterol and blood sugar levels, among other things. But research hasn’t shown that it has the same effects in people.

 

WHAT MAKES YOUR KOMBUCHA DIFFERENT

We understand Tea.  The base of kombucha is Tea and there needs to be a full understanding of the Teas you are using and the season of that Tea.  We bring that generational knowledge passed on from grandparent to child into our Kombucha.

The Teas we use create light tasting kombucha with very little sugar.  Due to this we don’t need to heavily flavour our Kombucha to hide vinegary or tart tasting kombucha.  This allows us to use real fruits and fresh herbs to flavour creating some of the best tasting kombucha with very little sugars.

 

Is your Kombucha made from a Mushroom?

This is something we get asked a lot. There must have been a lot of bad communication from Kombucha. What people refer to as a ‘Mushroom’ is actually in reference to the SCOBY (Symbiotic Culture of Bacteria and Yeast). This is not the most prettiest of things to look at but it creates all of this beautiful healthy bacteria, probiotics, healthy acids and so much more….so we kind of love it.

Ask our Brewers, they talk lovingly about it’s colour, how healthy it is looking, it starts to remind me of those Tamagotchi’s. Something you love, but you everyone else thinks you’re a little crazy as you talk about it.

Our SCOBY has been dated to over 200 years old and we have been training it for over 7 years for our formula of Kombucha.

There really is a lot involved in creating a healthy colony that brings the most out of your kombucha and a healthy SCOBY is vital to healthy products.
